My Family's Favorite Mac & Cheese

Ingredients

  • elbow macaroni
  • butter
  • all-purpose flour
  • evaporated milk
  • whole milk
  • butter
  • sharp cheddar cheese
  • mozzarella cheese
  • Parmesan cheese
  • cream cheese
  • dry mustard
  • chicken bouillon powder
  • ground nutmeg
  • paprika
  • Salt
  • Pepper
  • Dried parsley

Method

    Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to the package directions until al dente.

    Drain and set aside.

    In a large pot or Dutch oven over medium heat, melt 2 tablespoons of butter.

    Whisk in the flour to form a paste and cook for about 2 minutes, stirring constantly.

    Slowly pour in the evaporated milk while whisking to combine with the roux.

    Add the whole milk (or heavy cream), the remaining 2 sticks of butter, and the cream cheese.

    Stir in the nutmeg, paprika, dry mustard, and chicken bouillon.

    Season with salt and pepper to taste. Continue to stir until the butter and cream cheese are fully melted and the sauce is smooth.

    Gradually add the shredded sharp cheddar, shredded mozzarella, and shaved Parmesan cheese to the sauce, reserving some for layering and topping.

    Whisk continuously until all the cheese is melted and the sauce is creamy and smooth.
