Smash Burgers with Baconnaise Sauce
A double smash burger featuring crispy edges, melted pepper jack cheese, and caramelized onions, all brought together with a savory and smoky homemade Baconnaise sauce.

Ingredients
- mayo
- crispy bacon
- ketchup
- yellow mustard
- relish
- hot honey
- smoked paprika
- black pepper
- garlic powder
- apple cider vinegar
- ground beef
- pepper jack cheese
- burger bun, with sesame seeds
- onion
- bacon
- burger seasoning
Method

Slice bacon into small pieces.

Place the chopped bacon on a hot griddle and cook until nice and crispy.

At the same time, cook sliced onions on the griddle until softened and caramelized. Remove both from the griddle and set aside.

In a mixing bowl, combine the mayo, crispy bacon, ketchup, mustard, relish, hot honey, smoked paprika, black pepper, garlic powder, and apple cider vinegar.

Mix all ingredients together until well combined. Set the sauce aside.

Place two 1/4 lb balls of 80/20 ground beef onto the hot griddle.

Using a burger press, smash the meatballs down into thin patties.

Season the patties with your favorite burger seasoning.

Cook for 4-5 minutes on one side to form a nice crust, then flip the patties over.

Immediately place a slice of pepper jack cheese on each patty and let it melt. Once melted, remove the patties from the griddle.

Toast the burger bun on the griddle until golden brown.

Spread a generous amount of Baconnaise sauce on the bottom bun.

Place the two cheeseburger patties on top of the sauce.

Add the caramelized onions.

Top with more Baconnaise sauce and place the top bun on to finish.
